What To Do With Leftovers

As you know I was a counselor at our church camp a couple weeks ago.  As I know I haven’t told you anything about what happened.  It was a good week and I’m sure I’ll get to that – sooner or later.

Our camp actually serves meals that taste good.  Really.  I just happen to be one of the people that gets to eat some of the leftovers.  I think we went about a week on leftovers this year.

There was turkey and a turkey noodle mix that reheated well by itself.  There’s lots of things you can do with turkey! A casserole with turkey, cheese, and stuffing on top. [The stuffing was also leftover.] Turkey wraps and turkey salad used the last of it up.

There was meatloaf.  It’s okay reheated in the oven once.  Then I mixed it with the leftover rice, added some tomato sauce and stuff, and voila – Spanish Rice.

There was ham.  Cold, warm, hot; and mixed with cheesy noodles – yum!

I’m pretty sure that we got at least 8 family meals out of the leftovers that we had.  That doesn’t count what my husband took in his lunch.  When I change it up a bit it doesn’t feel like we’re eating leftovers all week.
