Have you ever volunteered to take Deviled Eggs to a get-together? Maybe you boiled the eggs but the shells refused to come off. You were so frustrated that you felt like cutting the shells off with a knife, or just throwing the whole egg out the window.
This method of hard boiling helps immensely with that problem! It’s wonderful. My mother-in-law found this through something Rachael Ray did.
- Put the eggs in cold water and rapidly bring them to a rolling boil.
- Turn off the stove and let them sit for 10 minutes.
- Drain the water. Put the lid on and shake the pan to crack the eggs.
- Put cold water in the pan and let it sit for a while – at least 30 minutes.
- Peel and enjoy. If it works correctly the shells will come off super easy!
Deviled eggs are my favorite thing to do with hard boiled eggs. I usually just mash the yellow, add mayo and paprika. Then another friend of mine brought deviled eggs that were delicious! So I begged to know how she did it.
Here’s the recipe for deviled eggs.
For 6 eggs you add the following to the yokes:
- 2 tablespoon mayo
- 1 teaspoon vinegar
- 1/2 teaspoon salt
- a dash of pepper
- 1/4 teaspoon paprika
- 1/2 teaspoon dry mustard
- 1 teaspoon prepared mustard

Older eggs also peel better than super-fresh ones.
Great tips. I love hard boiled eggs! And you’re right, sometimes I just want to throw them down when they won’t peel!
